Rosa & Ash
Rosa and Ash are one beautiful couple, kind hearted, generous and a perfect match! Their wedding was going to have to be big, colourful and a proper celebration. So when we started talking to them about their plans it was a really clear vision for a slick 3 course plated Wedding Breakfast, classic, elegant and with a little bit of extra Iranian va-va-voom!
In the following months we helped guide those big decisions. We tweaked and finalised the menu’s, had close family over for the tasting, ran through the style of service, double checked the time plan and made sure everything was going to spot on for the day. In addition we cooked and hosted Ash’s birthday party too, which was a wonderful pre-cursor to the wedding. Iranian dancing, let me tell you, is some of the most fun you’ll have at a party!
The Wedding Day:
The sun was shining, the weather glorious in the grounds of Preston Court, the scene was set for the wedding of a lifetime. Rosa looking like a million dollars and Ash as the suave gentleman he is, it couldn’t have got much better.
The Wedding Breakfast was a show stopper: a stunning potted lobster, crayfish and prawn served with a dill and coriander seed pickled cucumber, lemon, whipped butter and bread. The main course Norfolk Red chicken supreme, thyme dauphinoise, tender stem with radish, onion seed and chilli brioche breadcrumb, glazed with a twice reduced jus. It was just perfection on a plate! The dessert, a special request from Rosalina, a dish we had created a few weeks before; dark chocolate ganache tartlet, strawberry, cream, cardamom meringue and pistachio. The flavours bounced around and was that opulent finish to the meal; delicate, balanced and just the right flavour profile to get an extra big shout out in Alex’s speech!
As the sun lowered in the sky, the carousel fired up and everyone was having the time of their lives. However… I have to say, of of the most fun moments had yet to come! The Sword Dance. The whole family, friends, in a wonderful array of dance moves, wrist flicks and hip shakes. You just cant beat it!!
Words often don’t quite do it justice, but this is how we made it happen on the day. The team seamlessly set the tables, chefs did their magic in the kitchen and Rosalina and Ashkan got to sit back and take it all in. That is really what it’s all about. On the day it must be personal, memorable and unique. Only then our aims have become reality.
